first thing:
You should not (thats why the configuration policy in KACE which used to be avaiable there is gone)

But if you really want (and not updating systems are just a threat to your company and all others too) you can create a Script to do so with Scripting| Configuring Policies |Registry

This is the key: [HKEY_LOCAL_MACHINE\SOFTWARE\Policies\Microsoft\Windows\WindowsUpdate\AU]
and this is the setting: "NoAutoUpdate"=dword:00000001

are you asking how to stop KACE from running updates or how to stop windows from updating?  

As for kace, just shut off/delete anything scheduled.

As for windows, we do the same thing because we have another product that manages it.. we just shut it off in the gpo.
