How can I clear the Service Desk and start it from zero again?

We have gone through a bunch of testing and now have worked out most of our configuration and processes. We would like to blow out all of the ticketing and history so that we can start clean.

I figure who better to ask than the Ninja community.

Any help would be appreciated.
